Nyonya Chicken Curry

Ingredients

  • 185g jar AYAM™ Malaysian Nyonya Curry Paste
  • 600g boneless chicken, diced into 3cm pieces
  • 2 medium potatoes, peeled and diced
  • ½ cup water
  • 270ml can AYAM™ Coconut Milk
 

Method

  1. In a large saucepan over medium heat, add Curry Paste and chicken, stir-fry for 2-3 min.
  2. Add potatoes and water, stir well, cover and bring to the boil. Reduce heat and simmer for 30 min, stirring occasionally, or until chicken and potatoes are cooked.
  3. Stir in Coconut Milk and return to the boil.
  4. Serve with steamed rice.

Tip:

  • If a thinner sauce is desired, increase water to 1 cup.
