Vietnamese Summer Salad

Ingredients

  • 100g AYAM™ Rice Vermicelli Noodles
  • 800g cooked prawns, peeled
  • 1 Lebanese cucumber, julienned
  • 1 carrot, peeled and julienned
  • 10 snow peas, thinly sliced
  • 2 spring onions, thinly sliced
  • ⅓ cup fresh mint and coriander leaves
  • 1 cup bean sprouts
  • ½ bottle AYAM™ Vietnamese Dipping Sauce 200ml
  • 1 tablespoon fresh lime juice
 

Method

  1. Prepare vermicelli according to packet directions. Drain well. Cut into 5cm lengths.
  2. Place vermicelli, prawns, cucumber, carrot, snow peas, spring onions, mint and bean sprouts into a serving bowl.
  3. Toss through the dressing and lime juice. Garnish with chopped toasted peanuts if desired.
