Prawn Satay

Ingredients

  • 1kg medium uncooked king prawns, peeled and devein leaving the heads and tails
  • 1 tbsp AYAM Fish Sauce
  • 1 tbsp AYAM Sweet Chilli Sauce
  • 1 can AYAM Mild Satay Sauce 250ml

Coriander Avoicado:

  • 2 avocados, peeled, seeded, chopped
  • 2 tbsp chopped coriander
  • 2 tsp lime juice
  • 2 tsp mirin
 

Method

Mixing:

  1. Combine the fish sauce, the sweet chili sauce and the mild satay sauce in a large bowl.
  2. Add the prawns and toss to coat. Refrigerate for at least 30 minutes.

Grilling:

  1. Preheat the grill to high.
  2. Grill the prawns for about 2 minutes on each side, until just cooked through.

Presentation:

  1. For the coriander avocado dip, simply combine all ingredients (avocados, coriander, lime juice, mirin) in a serving bowl for dipping.
  2. You can do it also just before serving.

A simple dish, that not only tastes great, but also looks appetizing.
