Ingredients

Marinade:

  • 1 tsp grated ginger
  • 1 tsp grated garlic
  • 2 tbsp honey
  • ¼ cup ginger beer
  • 1 lemon, juiced
  • 2 tbsp dark soy sauce
  • ½ tsp sesame oil
  • 1 tbsp rice wine vinegar
  • Pinch of salt and pepper
  • 4 x 150g of beef fillet

Coleslaw:

  • ½ bunch of coriander, chopped
  • 1 medium carrot, grated
  • ½ daikon radish, grated
  • 1 bok choy, finely sliced
  • 1 long red chilli, chopped
  • 3 spring onions, chopped
  • 1 tbsp deep fried shallots
  • 1 tbsp sesame seeds
  • 2 tbsp vinegar
  • 2 tbsp olive oil
  • ¼ cup sweet Japanese mayonnaise
  • 4 soft style buns

Method

  1. Mix the grated ginger, garlic, honey, ginger beer, lemon juice, dark soy sauce, sesame oil, rice wine vinegar, pinch of salt and pepper together in a large bowl. Add the beef fillets and let marinate for about five minutes. N.B. Don't let it marinate for too long as this mixture is quite acidic.
  2. To make the coleslaw, in a separate bowl add the chopped coriander, grated carrot and radish, bok choy, chilli, spring onions, deep fried shallots, sesame seeds, vinegar, olive oil, pepper and mayonnaise. Mix together well.
  3. Cook the beef on a hot grill pan with a little oil, until cooked to your liking.
  4. Grill buns on a grill pan.
  5. Assemble sandwich with the fillet on the bun, generously topped with the slaw, the bun lid and a skewer to hold it together.
