Prawns & Clams in XO Sauce

Ingredients

  • 4 cloves garlic, crushed and thinly sliced
  • 1 red onion, sliced
  • 1 stem curry leaves
  • 1 inch ginger, cut into matchsticks
  • Extra virgin olive oil
  • Salt & pepper
  • Enoki mushrooms
  • 2 tbsp AYAM™ XO Sauce
  • 1 tbsp chilli paste
  • ½ tsp AYAM™ Sesame Oil
  • 2-3 tbsp AYAM™ Light Soy Sauce
  • 6 prawns
  • 600g clams
  • 1 spring onion
  • 1 bunch garlic chives
  • 1 bunch coriander
  • 1 bunch pea shoots
 

Method

  1. Add garlic, onion, curry leaves, ginger and extra virgin olive oil to a hot pan over a medium heat and saute for 2-3 minutes, season with salt and pepper.
  2. Add mushrooms, xo sauce, chilli, sesame oil and soy. Add prawns and clams, cover with a lid and cook for 3-4 minutes.
  3. Stir through spring onions, garlic chives, coriander and pea shoots.
